Fabiola
D. Gaines, R.D., L.D. is one of the founding partners of Hebni
Nutrition Consultants, Inc. (The developer of the original Soul
Food Pyramid – a culturally sensitive food guide pyramid.) She
is Co-Chair of the Cultural Diversity Committee for the Central Florida
American Diabetes Association in Orlando, Florida. Ms. Gaines is Chief
Clinical Dietitian for Depugh Nursing Center in Winter Park Florida. She
supervises the work of personnel providing nutrition services and clinical
support to patients at the nursing center.
In her current role she is also the author “The New Soul Food
Cookbook for People With Diabetes”, commissioned by the national
office for the American Diabetes Association. Her second book is titled,
“Slim Down Sister”, which is designed to assist women
with feeling good and losing weight. She has a third book, that is co-authored
with her partner, titled Month of Meals Soul Traditions,
twenty eight days of breakfast, lunch and dinner published be the American
Diabetes Association. The sales of the books have done so well, that her
partners have been asked to do another book for the American Diabetes
Association, with a release date in 2006.
She and her partner are responsible for nutritional analysis, taste testing,
and promotion of both books book. In addition, she provides educational
seminars to the American Diabetes Association, numerous radio and television
spots. Ms. Gaines is an avid lecturer on culturally sensitive nutrition
education for people of color.
Ms. Gaines received her B.S. in Foods and Nutrition from Florida A &
M University, and is a certified member of the American Dietetic Association.
Florida A & M University gave her a prestigious honor of being placed
on the Wall of Fame at the University and honored her as a distinguished
graduate of the university. She was married to the late Charlie Gaines,
and the mother of two children, Devona, and Tramaine.
